One former sushi restaurant employee explained why everyone loves Escolar, and why they shouldn’t. Escolar is a very light colored tuna which is popular for its buttery consistency. One day, the sushi chef sent the employee home with leftover cuts of Escolar, but after eating it, the employee was left with a horrible stomachache.

That’s because to get the buttery consistency in Escolar they feed the fish wax. Yes, straight up wax. The wax won’t kill you, but most high-end sushi restaurants won’t use the cut of fish.
